Hello!

Happy Tuesday everyone!

It's been a tough day for me. I'm always busiest the first two days of the week and then by Wednesday my week starts getting easier. Today everything was just getting to me. I like to pretend that I am tough and that I take every day as it is. I pretend that I can go with the flow and that little things won't get to me. That's just not reality.

There was really no particular event that made today harder than any other Tuesday. It was just a lot of little things that kept adding up. I had to film for my journalism class and my camera kept messing up, no one wanted to be interviewed, and I was rushing to be on time to everything today. I did my regular morning run but then I failed to make my quiet time with God. Honestly, I think that's why my day was so much more stressful than usual.

Thankfully, one of my afternoon classes was canceled so I was able to get my second run and workout in earlier today! I went to the gym at my apartment and busted out four more miles and a short whole body lifting workout. The best part about it was that I was able to jam out to some Christian music and just have some quiet time to pray and think to myself. No one else was at the gym so it was basically my own personal fitness center.


I had night class today and some of the girls on my team invited me to Chick-Fil-A for dinner so I met them beforehand. Now I know Chick-Fil-A is not the "healthiest" but it's all about balance! I also haven't hung out with my girls in a while so it was necessary.


Obviously this post is not about what I ate at Chick-Fil-A. The recipe here is a really easy throw together meal that I make for dinner when I am out of food but still trying to get my veggies and grains in. Since it is such a throw together meal I don't usually measure things out.


It's a simple stir-fry with frozen green peans and broccoli in a teriyaki sauce. The teriyaki sauce is from Aldi and it is delicious I totally recommend it. I use my rice cooker to make whatever rice I have laying around and I usually always have chicken on hand so I add that in for the protein. I first cook the chicken in the teriyaki sauce, then I add the cooked rice, broccoli, and green beans. I add some more teriyaki sauce and salt and pepper and cook on high for about six more minutes. It is super easy and a great meal on my busy days (when I'm not eating Chick-Fil-A).

I don't know about you, but one of the hardest things I've had to do since living on my own in college is learn how to grocery shop. When I was growing up I would go with my mom all the time. I would even peruse the aisles looking for the few items she assigned for me to find. Mindlessly walking around the store with your mom, however, is not the same as having to search for items by yourself. While she spends maybe twenty minutes getting supplies for the week I spend an hour.

I also find myself buying the same brands and products as my mom does. I don't think this is bad, but I do think there are things you can learn by straying away from what you are used to. My go to grocery store when I first started college was Publix, which down in the south is the alpha of grocery stores. If you haven't tried a pub sub yet than you're missing out. Actually, until this year I always bought my groceries at Publix, until I realized how much money I was wasting! 

Publix was my comfort zone. Sadly, it didn't matter how many bogo's (buy one get one) I got or deals I found, I was still spending way too much money on my food. I still go to Publix for my prescriptions and medicine but I am trying to get out of my comfort zone and explore other shopping centers. My goal is to find the best food for the cheapest price. 


Currently, my favorite grocery store is Aldi. It doesn't have the same homey feel as Publix, but it is extremely cheap and they have a lot of the same products. They also have more organic food for a cheaper price. 

This week I wanted to change things up even more. I'm always trying to push myself out of my comfort zone and going to a new grocery store usually does the trick. I honestly don't know why I'm like this, my only excuse is that humans are just creatures of habit. With this in mind, I traveled over to Earth Fare! 

I really liked Earth Fare! They have so many organic products that don't break the bank! There were so many choices and they had organic options of everything. I really liked their produce section because they had an area specifically for seasonal items and I'm always really bad at buying seasonally. I also liked their meat section because there was barely any packaged meat. It was all fresh cut and you had to ask the butcher for what you wanted. 


I didn't like the dairy section or the frozen food section. As a college student frozen vegetables are really important to me. I hate wasting food but sometimes I get busy and forget to cook what I have. If I buy fruit and veggies frozen they last so much longer and I will always eventually eat them. The dairy section was just very expensive. 

Another aspect I really liked about Earth Fare was that they had a fresh pasta and fresh made buffet style food section that were ready to be eaten right there. It was kind of like a restaurant! You could choose whatever food you wanted and go home and have an instant meal. If I'm ever driving by Earth Fare on a busy day I may just stop in to test out these sections. 


Overall, Earth Fare has very healthy organic options. It is also eco friendly and uses recyclable paper bags. I spent a little less than what I would at Publix so it wasn't the cheapest option. However, I will go back for some of the organic food items that I can't find elsewhere.

Have you ever felt lost, unbalanced and out of control? I have many times in my life. I started atypical appetite for one of my classes in college, but it turns out that this blog is actually a joy to manage and create content for. As I continue to write and create this blog I can't help but think that it is a waste to talk about living a healthy balanced lifestyle without talking about the One who ultimately gives me balance.

For this reason, I have decided to introduce Wednesdays in the Word. I will be blogging about one thing that the Word of God has taught me and that I think may help others. I am by no means perfect. I may get things wrong and may say something you disagree with. This is a learning process and I am constantly growing in my relationship with God. I simply want to share some of the things he teaches me. I hope you come along for the journey! I am always open for advice and suggestions!

Of course, food will be the main focus of this blog. But, every week you can look forward to Wednesdays in the Word. I will tie my lifestyle advice and updates about running into these posts as well.

The first Wednesday in the Word is based around the song Clarity by For All Seasons. It came up on my spotify playlist a few days ago and I have been obsessed with it every since. As a control freak it is so easy for me to feel like my life is spiraling away. I like to control every little thing. Especially when it comes to my future. I am not someone who easily goes with the flow. Anyone else like this?

I love this song because it makes me think of Luke 12.
Luke 12:22-26
“Do not worry about your life, what you will eat; or about your body, what you will wear. Life is more than food, and the body more than clothes. Consider the ravens: They do not sow or reap, they have no storeroom or barn; yet God feeds them. And how much more valuable you are than birds! Who of you by worrying can add a single hour to his life? Since you cannot do this very little thing, why do you worry about the rest?"
The bible basically tells us not to worry about the future, what we will eat or what we will wear. It tells us that God takes care of the animals and that they need not worry so why do we. I take so much comfort in this because it is a promise that God will take care of us. When life is out of control he won't forget me.

If you are feeling like your life is out of control remember that God is in control. When we learn to have an atypical appetite and hunger for the things of God we will ultimately be able to trust that He is in control. Don't worry this isn't easy and I'm learning just as you are! Feel free to share anything you've learned about letting go of control in your life. I would love to hear about it!

Here is my breakfast from Monday! I made banana blueberry oats and they were so yummy! They had the perfect consistency and just enough protein to carry me over to lunch. I made them by combining 1/2 cup of rolled instant oats with 1 cup of almond milk and half a cut up banana. I heated this mixture up for about 1 minute and 30 seconds. Afterwards, I stirred it so the banana mixed into the oats and added my toppings. I added cinnamon, chia seeds, mixed nuts, frozen blueberries, and almond butter. I like to add frozen fruit because they don't get as mushy as fast and it just adds another yummy texture.

This is a great breakfast for any morning where you are feeling rushed. It took me less than five minutes to make and I devoured it in probably even less time. Thanks to the nuts and nut butter I got enough protein in to fill me up. I would also suggest this for anyone that struggles making it to lunch without a few snacks in between.

Big News!

I know this is a short blog post, and while the point of it is to share this super yummy breakfast meal, I also wanted to introduce a new aspect about atypicalappetite to you guys!

In addition to writing about ways to eat healthy/balanced food, I want to keep you guys updated with my running as well as my spiritual journey. It is so early into my blog that I don't want to say I'm rebranding, but rather I am just adding to my brand.

I chose the name atypical appetite thinking that it fits perfectly with how I want to be seen by the world. I don't want to conform to the world and eat all the unhealthy processed foods that are so common nowadays. As I continued thinking about living an atypical life, I thought about how God calls us to live apart from the world. He calls us to live lives that show his light to the world. He does not want us to conform to the world either. In the bible God says we are the salt of the earth (Matthew 5:13-16). As the salt of the earth we are called to share his gospel to everyone we can. How can we do that if we ourselves have a typical appetite for the things of this world. We must have an atypical appetite for the things of God.

So I write all this and I make this connection with the name of my blog to say that I am going to share my spiritual journey with you guys. I hope that I can gain guidance from you and maybe even help someone who may be struggling. I hope we can all learn to have atypical appetites and nonconforming attitudes toward the things of this world. Thanks for going on this journey with me!!

I hope everyone's last week went well. It is finally beginning to look a little like summer here in Florida. My last week was a bit chaotic but fun nonetheless. As everyone knows Valentines day was last Wednesday. I would have loved to go on a super cute date with my super cute boyfriend, but instead I spent nine hours on a bus ride to Virginia for our indoor conference track meet. My boyfriend, Chris, was on the bus as he is also a track runner. While I love him sitting on a bus isn't really in my definition of fun. 


Regardless, he is very sweet and came over to make me breakfast before we got on the bus. He also bought me my favorite flower, an orchid! To make up for our lost Valentines day I decided to make him a delicious dinner when we returned home. 


A little about the track meet, the women's team placed third overall. I ran the 1200 meter in the distance medley relay and we placed first and broke the school record by two seconds! It was a team effort for sure but God blessed us with a really great last leg by one of my teammates. I also ran in the 5k and it was awful. The last two weeks I had run as little as 20 miles because I was coming back from the flu. I just didn't have the endurance and grit that I usually do, but I have an amazing coach who was very understanding. 

It is so easy to get lost in one race and sit in your disappointment. I've learned through six years of running that failure is a learning process and accomplishments are fleeting. It is so important to find joy in the process. Thankfully, my coach also understands this and has complete faith that I will get my fitness level back and be ready for outdoor. How do you guys get through failure? I would love any advice! 


After a long weekend of racing I was determined to make a delicious meal for myself and Chris. I love apple butter, my great grandma had an amazing apple butter recipe that I will make one day! The apple butter from Aldi isn't the same as my grandma's but it is still good. I decided to take my love of apple butter and combine it with my distaste for pork. I'm really not a fan of pork it is probably my least favorite meat. But, by combining it with apple butter it was delicious. I also wanted to use apple butter because it is red and Valentines-ish. Hence, I made apple butter pork chops with roasted asparagus and potatoes! 

Here is the full recipe:

Ingredients:
2 pork chop filets
salt and pepper
3 tablespoons butter, divided
1/2 cup of apple butter
2 gala apples, cored and sliced, do not peel them
2 tablespoons packed brown sugar
1 teaspoon chili powder
1/4 cup heavy cream 
Asparagus
Tri-color Potatoes
Olive oil
Parmesan cheese
garlic powder

Instructions: 
  1. Salt and pepper the meat. 
  2. Melt one tablespoon of butter in a skillet. 
  3. Cook meat for three minutes on each side, take off heat and let rest. 
  4. Cut apple slices and add remaining butter to skillet.
  5. Cook apples for a few minutes until they are soft. 
  6. Add brown sugar, apple butter, cream, chili powder into skillet and bring to a boil.
  7. Add meat to sauce and make sure the bottoms are touching the skillet (no apples underneath them). 
  8. Cook meat for four more minutes on each side or until meat is cooked through. 
  9. Serve with sauce and apples on side. 
For the Sides:
  1. Preheat oven to 425. 
  2. Cut potatoes in little bit size pieces and place on sheet pan. 
  3. Place asparagus on sheet pan. 
  4. Season potatoes with garlic powder.
  5. Drizzle olive oil over asparagus and potatoes.
  6. Cook for 20 minutes. 
  7. Turn oven off take sheet pan out and toss some parmesan cheese over the asparagus. 
  8. Place back in the oven for three minutes or until the cheese has melted. 
  9. Take out and serve.

This past week in Florida has been so depressing. Every day has been rainy, overcast and just overall miserable. I miss my beautiful sunshine state. On Tuesday, to combat this awful weather I decided to make as bright and sunny of a dish as I could. Hence, the quinoa asparagus taco bowl! 


I have been trying to eat as many different types of vegetables as I can because I want to boost my immune system. After getting the flu for a week I want to do everything I can to stay healthy. I've never liked asparagus, but I'm always open to trying things again. As you can see I buried my asparagus in cheddar cheese in my attempts to make it yummy, and it worked! The asparagus was delicious!

Another boring food is quinoa. But, if you simply spice it up a little bit quinoa is also delicious. I used salt, pepper, chili powder, paprika, and garlic powder to give my quinoa that taco meat flavoring. I also got my protein in by adding a frozen black bean burger to my bowl. To add some more heat I also poured in medium salsa, and to make it brighter for the picture.  


This taco bowl was just what I needed! It was delicious and it was so bright, happy and warm. I can't wait for summer and beach days but to get through the rest of this winter I will just keep making yummy taco bowls.

Also track update! This weekend we are at Liberty University for the ASUN indoor conference meet! I will be running in the distance medley relay and the 5k so wish me luck! I will update everyone on how it goes in next weeks post!

If you haven't heard by now let me tell you, the flu is bad this year. Sadly, in spite of all my efforts I am one of its victims. It hit me like a tidal wave Monday afternoon. I left my internship early thinking I was just in a funk and needed sleep. No one in my apartment, me included, had the forethought to bring a thermometer to college so I had no idea if I had a fever or not. I was planning on doing a workout the next morning and then going to the doctor just in case I was sick. Thankfully my teammates, mom, and coach stopped me from doing that and I went to the doctor at the track that night instead.

Now I'm taking tamaflu, trying not to take a deep breath so my chest doesn't explode, and rotating between doses of Tylenol and Advil. I'm quarantined for at least 48 hours the doctor said. It's been a lonely time but I've also been able to catch up on a lot of extra work so maybe it's a blessing in disguise. (The Lord knows best).

I'm worried about not being able to train much this week and having indoor conference the week after. But, I know that rest is necessary to get and remain healthy so I'm just going to trust that I have enough base training to get through this period.

On the food side of things, I've been subsisting on soup, oatmeal, and popsicles. While I love all these things I needed a little diversity today and I have been craving pancakes ever since my boyfriend picked up pancake mix at Aldi last week.



Since I can't leave my house I searched my kitchen for things I could use to make some pancakes, not having any real "pancake mix." I found applesauce on the go packets, oatmeal (big surprise), an old banana, and some eggs. I also decided to spice them up with some cinnamon sugar spice mix and vanilla extract. I used coconut oil to cook them in a skillet and oh were they delicious.



I topped my pancakes with cashew butter, honey (the doctor told me I could go crazy with honey this week so I said okay), and some chia seeds.



Tamaflu can be pretty hard on the stomach, or at least on my stomach, so I've been trying to eat bland foods this week. Last night I think I almost died from indigestion because I ate tomato sauce. My pancakes were just what I needed and I hope they can make you happy as well!

This weekend has been one of those weekends where life never stops moving. It started with an indoor track meet at the JDL Fast Track in Winston-Salem, North Carolina. The meet itself was a great experience. I ran my second 3k of the season and ran a personal best at 10:12 and I won my heat! While winning my heat was great I still only placed 10th overall. It is so important to enjoy the little victories in life, but also to remember that you can't slack on the hard work. 




While the meet went great and my team came home with around ten personal records the journey home was absolutely awful. Our bus became stuck while driving up a hill into the track facility parking lot so we didn't get on the road back to Florida until 11 p.m. and we didn't arrive home until 6  a.m. the next morning. It's safe to say it was a bonding moment for us all.


After this long crazy weekend I was blessed by my boyfriend, Chris, who took me to the Jacksonville Symphony. We enjoyed some beautiful music and an overall great time. With this weekend being quite busy, and a little bit stressful, the best thing I could come up with to cook was some tacos. 

Tacos are the easiest thing to make and my go to when I'm feeling drained. I just bought some lean ground beef from Publix and some taco seasoning and threw it together. I always top my tacos with salsa, sour cream, and cheese. Tacos are another extremely customizable food! What do you guys like to put on your tacos? 


While I made the most basic tacos for this post my goal is to make brisket tacos one day! There is a delicious restaurant called Tacolu in my city and they have the BEST brisket tacos. I will update you guys as soon as I make them!
